Pumpkin Soup is always a winner. If it’s in the cold and dark winter, or if you just feel like making an easy, healthy and delicious meal, we recommend this soup. We guarantee you’ll love it.

What you’ll need:

1 Hokkaido pumpkin. Ca. 800 grams.

1 onion.

3 cloves of garlic.

3 carrots.

1 Letter Mandala Herb broth.

1 ds. Coconut milk.

1 lemon.

Salt, pepper, chili pepper, ginger, cumin flavor.

What To Do:

Start peeling, onions, garlic, carrots, and clean the Hokkaido pumpkin dish. Extract the pumpkin dish and cut it all into rough pieces.

Saute it all in a thick pot, until they just start coloring. Pour 750 cl. water on, along with Mandala herb broth. Put it to simmer-boiling under the lid. Aftertaste, ad chili, ginger, cumin and lemon juice and peel.

Cook the soup through for approx. 20-25 minutes, add the coconut milk. And blend it all into a consistent consistency.

Season with salt and pepper and serve the smokers warm. Get some fresh herbs on top, or maybe a little handful of roasted kernels.

Tip: The cuts that you scratch out can be used to save and use a good bread. Blend it all, it will give the bread a slightly nutty flavor.
